New Camping Desserts to Try

There’s more than s’mores

Don’t get us wrong, s’mores are a camping classic, a summer must have, a timeless delight. However, sometimes you want to throw something new in the mix. If you’re camping for multiple nights, you might not want s’mores every night. Here are some new camping desserts that are quick and easy to whip up, as well as tremendously satisfying.

Dessert Bruschetta

You may be familiar with classic tomato and basil bruschetta, but have you met its sweet cousin? With a few simple supplies you can easily whip up dessert bruschetta.

Ingredients

  • Rustic bread of your choice (e.g. sourdough)
  • Olive oil
  • Chocolate hazelnut spread
  • Sliced fruit (e.g. strawberries, bananas, peaches, raspberries)
  • Mini chocolate chips
  • White chocolate chips
  • Chocolate bar to grate

Slice the bread thickly, brush both sides olive oil, then grill until toasted. Spread chocolate hazelnut spread on bread and top with fruit and chocolate chips/grated chocolate.

Blueberry Cheesecake Tostadas

Ingredients

  • 1/2 cup butter
  • ½ cup sugar
  • 3 Tbsp. cinnamon
  • 2 Tbsp. lemon juice
  • 1 (8 oz) package cream cheese, softened
  • 2/3 cup sour cream
  • 1/3 cup powdered sugar
  • 1 tsp. vanilla
  • 2 cups fresh blueberries
  • Zest of 1 lemon
  • Honey
  • Fajita-size tortillas (8-10)

Melt butter in pan on the grill. Combine cinnamon and sugar in small bowl. In separate bowl mix lemon juice, cream cheese, sour cream, powdered sugar and vanilla. Brush one side of a tortilla with melted butter and sprinkle with cinnamon sugar. Place sugar-side-down on the grill and cook until tortilla bubbles and bottom is crisped and brown. Brush top side or tortilla with butter and flip. Place tortilla, sugar side up, on plate. Spread with cream cheese mixture, top with blueberries and a pinch of lemon zest, then drizzle with a little honey. Repeat.
